Anchovy fillets from the Cantabrian Sea in olive oil
Between the northern coasts of Spain and the south-western coasts of France we find the Cantabrian Sea, where we fish unique and world-renowned anchovies. The anchovies are processed on the fishing site, left to mature and then immersed in olive oil. Also excellent to enjoy alone on a slice of toasted bread with a little butter. It is an MSC Sustainable Fishing certified product.
The Cantabrian Sea is a coastal sea of the Atlantic Ocean that washes the north coast of Spain and the north-west of France. A cold, unpolluted sea, which allows anchovies to grow in size and with a very firm and tasty pulp
Fishing is regulated from year to year to not allow massive exploitation of the sea (from the blog "Il Gastronauta" of the legendary Davide Polini we report this note: from 2005 to 2010 a biological closure of 5 years was imposed because the anchovies were almost at risk of extinction).
Fishing for this species is controlled and limited from the beginning of March to the end of June. This is the period in which anchovies present their best characteristics and a perfect balance between meat and fat.
The processing of anchovies takes place in an artisanal and manual way: from preparation for salting, through filleting, up to the final jar.
