Pecorino cheese
Fiore Sardo is the oldest pecorino cheese in Sardinia, dating back to the Bronze Age. Production takes place entirely on the island and involves the processing of raw sheep's milk. The PDO quality is guaranteed by the Consortium of Protection through the presence of the stamp on the form. Each stamp is unique and bears a progressive number which can be used to identify the producer and the date of production. The minimum maturation period is about 3 months, which gives the cheese a hard texture and a strong, spicy aroma. We recommend tasting it at the end of a meal, accompanied by sweet flavours such as persimmon, white grapes and fig jam. Recommended wine: Cannonau di Sardegna.
