

The Long Candles are a traditional pasta shape from southern Italy, historically widespread especially in the Neapolitan area,
they owe their name and shape to the candles used during the liturgical processions.
Candles, like Ziti and Zitoni, must be broken by hand into irregular parts, before being placed in the pot for cooking.
Candles are excellently suited for the realization of recipes elaborated in the oven.
They also go well with vegetable sauces, prepared with tomato sauce with olives and capers or enriched with courgettes, aubergines, peppers and any other vegetable.
