The Pacchero Rigatello Pasta di Gragnano PGI from Fabbrica della Pasta, made with short-chain Italian wheat, is a short pasta format very similar to the classic paccheri rigati but with more pronounced grooves which help to better absorb dense, full-bodied sauces and condiments. The Paccheri were born from a very particular anecdote from Gragnano. At the end of the 19th century, children were dedicated to collecting rubbish (remnants of pasta that fell while drying in the street). Sometimes it happened that someone tried to keep this waste pasta for themselves and the owner of the factory, realizing what had happened, punished them by giving them a loud slap, which in the Neapolitan dialect is indicated by the name "pacchero".
