Cantabrian Sea anchovy fillets in olive oil

The best anchovies in the world have always been produced in the Cantabrian Sea, a sea of passage between the cold waters of the north and the more temperate ones. The raw material is Engraulis encrasicolus, a European anchovy that does not match the meat in terms of size and taste.
The anchovies are cleaned and washed in water and salt, dried and filled into barrels where they rest for a long time; this is the "maturation" of the product, which is essential to achieve a high standard of quality in the final product. This stage lasts an average of 5/6 months, up to 10 months, depending on the size of the anchovies.
