Product of the peasant tradition par excellence
Juicy with red fruits
Peperonata Saclà is made with crunchy and fragrant yellow and red peppers, onion and tomato. Ideaa to be enjoyed on warm bread and croutons, it is also an excellent side dish to accompany aged cheeses and cured meats.
The yellow and red of the peppers used to produce it characterize the Saclà peperonata. A real product of excellence and quality enriched with onion and tomato which, together with the fragrant and crunchy peppers selected by Saclà, make Peperonata a unique experience for those who taste it.
Stewed chicken with Piedmontese peppers
Preparation
1 In a non-stick pan, heat 2 tablespoons of extra virgin olive oil with the previously chopped vegetables and the herbs gathered in a bunch.
2 Sauté lightly for 5 minutes, then add the chicken breast cut into large pieces. Roast on both sides for ten minutes until golden brown, then lower the heat, add a glass of white wine and cook for 1 hour adding vegetable broth from time to time.
3 Season with salt and pepper. When cooked, add the olives and the Saclà peperonata, keeping 1 tablespoon in the jar, then cook over low heat for a few minutes.
4 Blend the reserved peppers and 100 ml of vegetable stock in a blender. Spread a layer of creamy pepper sauce on each plate, add the chicken breast with the peperonata and serve.
5 Garnish with a selection of fresh herbs such as thyme, mint, marjoram and thin slices of Saclà artichokes.
