Stewed chicken with Piedmontese peppers

1 In a non-stick pan, heat 2 tablespoons of extra virgin olive oil with the previously chopped vegetables and the herbs gathered in a bunch.

2 Sauté lightly for 5 minutes, then add the chicken breast cut into large pieces. Roast on both sides for ten minutes until golden brown, then lower the heat, add a glass of white wine and cook for 1 hour adding vegetable broth from time to time.

3 Season with salt and pepper. When cooked, add the olives and the Saclà peperonata, keeping 1 tablespoon in the jar, then cook over low heat for a few minutes.

4 Blend the reserved peppers and 100 ml of vegetable stock in a blender. Spread a layer of creamy pepper sauce on each plate, add the chicken breast with the peperonata and serve.

5 Garnish with a selection of fresh herbs such as thyme, mint, marjoram and thin slices of Saclà artichokes.
