The Amatriciana IGP ham boasts a specific quality that comes from the traditional, particularly high-quality trimming technique. This operation, which characterizes this product, comes from the centuries-old experience gained by the producers in the area and gives the ham a rounded “pear” shape.

In addition to the external visual aspect, thanks to this operation the exposed surface useful first for the absorption of the salt tanning and subsequently for the drying action of the air is increased; thus a finished product is obtained characterized by a lower humidity content and a higher protein content which are an indicator of the quality of the ham.

These characteristics are in line with the good olfactory and consistency characteristics of the product, characterised by a significant compactness to the touch and an intense aroma of seasoning.

The pink/red slice has a savoury but not salty flavour and has a pleasant, sweet and intense aroma.
