Description
This is a very special cheese, produced using equal proportions of sheep's, cow's and goat's milk. After an initial maturing period in the cheese factory's cells, it is transported to a natural environment, inside an eighteenth-century tufa cave located in Lari, a town in the province of Pisa, where it will remain for a second maturing period of at least 90 days. At the end of the maturing process, the surface of the product is treated with charcoal, which gives it its characteristic black crust.
