
Description
Millefiori honey is pure expression of the harvest area, restoring its smells and flavors.
In fact, its characterization is never homogeneous and varies according to the production area and the period in which it is harvested.
It is generally crystallized, with a color tending to amber, which can vary from opaque white to golden with orange shades, to bright yellow, up to hazelnut.
The aroma is enveloping and its scent ranges from floral notes to hints of candied fruit.
It has a sweet, fruity and floral flavor; on the palate its aromatic scale is extremely wide and varied. It is produced during the spring and summer, especially on the hills of the Apennines.
Mielizia honeys are not pasteurized: they are produced at a temperature never exceeding 40 °, the temperature of the hive, to keep the flavor, aroma and nutrients intact.
