This recipe was born from the marriage between 4 PEPI of different varieties and types. The search for balance between the different varieties gives spiciness, roundness, aroma and perfume to the meat. The aromatic notes embrace a wide spectrum of sensations that vary from herbaceous to floral, passing through citrus and spicy. None of these prevails, but they all contribute to creating a new one-of-a-kind taste sensation.

It is the recipe closest to tradition: cayenne pepper, black pepper, salt characterize this version. The chili pepper is present, not aggressive, but delicate.

The most classic of rolled pancettas without rind: it is obtained from the fatty part of the pig which, once trimmed, is salted, left to rest, massaged and, finally, rolled up on itself. It is precisely this phase, which brings the fatty part to the outside, that gives the product a tasty taste and a soft consistency. The minimum seasoning is 60 days, always in the Ibis cellars of Busseto. The finished product is in a net to ensure ease of service.
