Description
Cheese prepared with sheep's and goat's milk raised mainly on pasture, this pecorino takes its name from its main production center, a small village in the Val d'Agri that has always been famous for the maturing of cheeses, Moliterno, where in winter the cheese from the sea pastures, fatty and rich in butter, and in summer that from the mountains, with a lower percentage of fat, but more aromatic. The first, considered the most valuable, "emigrated" to America and to northern Italy; the second was consumed locally.
