On the plate, they come together in a delicious "elbow to elbow" embrace with taste and imagination.
Ingredients: 2 potatoes, 1 onion , parsley , 1 pinch of chilli pepper , 500 g clams , qb extra virgin olive oil , qb , 400 g elbows (divella paste), pink peppercorns .
Preparation :
First of all, peel and wash the potatoes, cut them into cubes and place them in a bowl with water, in the meantime slice the onion finely and add it to the pan with a drizzle of oil, brown it and add the chopped chilli pepper with the parsley, mix well and add the potatoes, mix to combine the aromas and cook for about thirty minutes. In the meantime, drain the clams and let them open in a pan with a drop of oil on the bottom, cover with a lid and when they are all open, your clams are ready, filter their sauce with a sieve and keep it aside, shell half of it. When the potatoes are cooked, add the clam sauce, mix and cook for about ten minutes.
Cook your pasta, drain it al dente and add it to the pan with the sauce, let it flavor for a few minutes, serve with a sprinkling of chopped parsley and pink peppercorns and serve piping hot.
