Description
Semi-fat hard cheese, cooked and slowly matured, produced with thermised milk with coagulation at fermentation acidity, from cow's milk coming from two daily milkings. The crust is hard, 3/6 mm thick, with an intense yellow color. The internal paste is slightly grainy with a straw color. The flavor is characteristic of mature cheese, intense but pleasant.
