Semi-hard or hard sheep's milk cheese, table cheese, with a sweet and balanced flavour, more pronounced as it matures. The paste is compact, white in young cheese, straw-coloured in mature cheese.
Fiore Sardo is the oldest pecorino cheese in Sardinia, dating back to the Bronze Age. Production takes place entirely on the island and involves processing raw sheep's milk. The DOP quality is guaranteed by the Protection Consortium through the presence of the stamp on the form.

- Stale bread 300 gr.
- Eggs 2
- Pecorino Sardo Fiore Central qb
- Salt qb
- Pepper qb
- Parsley to taste qb
- Tomato sauce 300 ml.
- Garlic 1
- EVO oil qb
PREPARATION
1) Put a little oil in a pan and gently fry the garlic, add the tomato sauce, season with salt and add the basil.
2) Soak the stale bread for about 20 minutes.
3) In a bowl, place the breadcrumbs, eggs, Pecorino Sardo, fine parsley, salt and pepper, then knead everything together.
4) Form the mixture into balls and fry them in plenty of hot oil.
5) Serve the Pecorino Sardo Fiore meatballs with the tomato sauce.
