Spaghetti with spicy sardines, aubergine, tomatoes and fresh mint.

Ingredients: 400 g of spaghetti , 2 packs of Spicy Portuguese Sardines in Olive Oil Angelo Parodi, 1 aubergine, fresh mint

3 cloves of fresh garlic, extra virgin olive oil, tomato , salt.

Clean the aubergine thoroughly, cut it into small pieces, fry two crushed garlic cloves in a high-sided pan, add the diced aubergine, sauté for about fifteen minutes over a moderate heat with a lid and when cooked, season with salt. In another high-sided pan, four tablespoons of extra virgin olive oil, a crushed garlic clove, two tablespoons of warm water, cook the garlic and add the drained Angelo Parodi Portuguese Sardines in Olive Oil, remember to keep at least four, to plate. When you hear it sizzling a little, add the tomato sauce, let everything flavour for about fifteen minutes. The time to cook the spaghetti al dente, drain and add the pasta to the sardine and tomato sauce, to the diced aubergine, sauté well and when ready to serve, add some chopped mint leaves. Enjoy your meal!
