The loaves thus obtained are treated scrupulously until they are suitable for the delicate smoking phase which is carried out in rooms specially created to allow a slow and gradual treatment during which, while maintaining the climate controlled, the right quantity of smoke obtained from a particular selection of noble wood.

Ingredients

Yellowfin Tuna (Thunnus albacares), salt, sugars (dextrose), flavourings, spices. Preservative: E331 Antioxidant: E301. Natural smoking with beech wood.
